Falafel

3 lbs of dried garbanzo beans or chick peas
(soak over
night, rinse and drain thoroughly)
1 diced onion
1 bunch of parsley chopped
1 1/4 c. of flour
1T garlic powder
1T salt
1T baking soda
3/4 T cumin
3/4 T black pepper
1/4 T nutmeg
Mix well in a large bowl.  Form falafel mix into 2" balls and indent the center with your knuckle (this will allow it to fry evenly).  Deep fry at 300 degrees until golden. Remove and place on paper towels to soak grease.  Get your favorite pita, some fresh veggies and eat!
